For the pancakes:
1 cup almond milk, unsweetened
4 egg whites
1 tsp vanilla extract
2 bananas
1/4 cup whole wheat flour
1 tsp baking powder
2 tbs cocoa powder
pinch of salt
For the filling
1/4 cup Cool Whip Lite
2 Oreos

Add the almond milk, egg whites, vanilla extract and bananas to a blender and pulse until the mixture is no longer lumpy. In a bowl, combine the flour, baking powder, cocoa powder and salt. Whisk in the wet ingredients.
Spray a nonstick skillet and turn onto medium heat. Pour the batter into medium sized portions on the skillet (I was able to do about 3 at a time) and wait until you begin to see bubbles. This is when you know that they are ready to flip. Cook on the other side for approx 1-2 minutes.
Crush the Oreos in a ziploc bag and top the pancakes with a Cool Whip Lite and crushed Oreos. Enjoy!
